Ginger Syrup (Stove)

Ingredients

  • 4 parts ginger
  • 4 parts sugar
  • 3 parts sugar

Instructions

  1. Peel and cut the ginger into small discs.

  2. Combine water and sugar in a pan over medium heat until the sugar dissolves.

  3. Add the ginger and stir.

  4. Bring the mixture to a light boil.

  5. Simmer for 15 minutes.

  6. Remove from heat and steep for another hour.

  7. Strain into a sterilized bottle.

Keep refrigerated. Lasts 1 month.

Hints

  1. This traditional way of making ginger syrup will yield a slightly sweeter, and less spicy version of our main ginger syrup.

  2. If you want to add a bit more spice, grate some of the ginger prior to adding it to the pan.

  3. One benefit of this syrup over the other version is that you'll be left with candied ginger. After straining the syrup, simply dehydrate the remaining ginger pieces. If you don't have a dehydrator, add them to your oven over low heat for a few hours.
