Ginger Syrup

Ingredients

  • 1 part ginger juice
  • 1 part sugar

Instructions

  1. Combine both ingredients in a blender in medium speed for 30 seconds, or until the sugar is fully disolved.

  2. Pour into a sterilized bottle.

  3. Keep refrigerated, lasts 2-3 weeks.

To make ginger juice:

  1. Take fresh, peeled ginger and either put it through a juicer, or blend it with a little bit of water in a blender.

  2. Strain through a fine mesh strainer.

Hints

  1. Using ginger juice provides a really hot ginger syrup. However, you can also make this syrup the more traditional way: By simmering fresh ginger.

  2. You'll find a lot of different ratios for ginger syrup: The more ginger juice you add, the hotter it will be. Regarding Cocktails features a 6:5 ratio. Erick Castro uses a 4:3 ratio.

  3. Mix ginger syrup with soda water and some lemon juice for a quick and refreshing drink you can have during the week. Consider adding a barspoon of simple or honey syrup if you want to sweeten it without adding more ginger flavor.
