Raspberry Syrup

Ingredients

  • 1 part rich simple syrup
  • 1 part fresh raspberries

Instructions

  1. Add raspberries to a sealable container.

  2. Muddle lightly.

  3. Add the syrup.

  4. Close the container and shake for a few seconds.

  5. Store in the refrigerator for 24 hours.

  6. Strain into a sterilized bottle.

Keep refrigerated. Lasts 1 month.

Hints

  1. You can pour this syrup over ice cream, pancakes and waffles, or to make non-alcoholic drinks.

  2. Berries contain pectin, which will help to naturally thicken the syrup.

  3. Fresh berries will be sweeter than frozen berries. The latter can be more tart.

  4. Some recipes call for boiling sugar, water and raspberries together. This works, but the end result will taste closer to jam than to fresh raspberries. If that's what you're looking for, give it a try!
