Ingredients

  • 52.5ml vodka(suggested: Suntory Haku)
  • 15ml Cointreau
  • 22.5ml lime juice
  • 15ml passionfruit purée
  • 1 passionfruit
  • 15ml vanilla syrup
  • 60ml Champagne, for a sidecar

Passionfruit half

Instructions

  1. Cut the passionfruit in half and scrape its contents into a shaker with ice.

  2. Add the rest of the ingredients except for the Champagne into the shaker.

  3. Shake until chilled.

  4. Double-strain into a coupe.

  5. Garnish with the other half of the passionfruit.

  6. Serve alongside a small glass with Champagne.

Hints

  1. The Champagne is meant to cleanse your palate as you are drinking the cocktail. Do not mix it into the drink!

  2. If you have fresh passionfruit, you can make your own purée. It's as simple as separating the flesh from the seeds!

  3. While passionfruit purée isn't exactly the same as passionfruit pulp (the latter includes the seeds), feel free to use it as a replacement in a pinch!
