  • 20ml crème de cassis

Instructions

  1. Pour the crème de cassis into a flute.

  2. Top with Champagne.

  3. Twist a lemon peel over the glass to express the essential oils and garnish with the twist.

Hints

  1. This is a popular cocktail with a great number of variations. It works with other liqueurs: crème de peche (peach), de mûre (blackberry), de pamplemousse (grapefruit), de framboise (raspberry), and so on.

Trivia

  1. A variation on the Kir, which was created some time around 1904.

  2. It gets its name because it was heavily promoted by Félix Kir. While serving as mayor of Dijon, Kir looked to popularize products made in the region.

  3. Félix Kir (1876-1968) was a Catholic priest who became a resistance fighter during the occupation of France during World War II. He helped 5,000 prisoners of war escape from a camp at Longvic.

  4. In 1945, Kir was made a knight of the Légion d'honneur and elected as mayor of Dijon, where he remained until his death in 1968.
