High King Highball
Ingredients
- 3 large raspberries
- 15ml simple syrup
- 60ml Irish whiskey(suggested: Clontarf Irish whiskey)
- 15ml Aperol
- 22.5ml lemon juice
- 22.5ml grapefruit juice
- 1 dash Peychaud's bitters
- club soda, for topping off

Lemon wheel and raspberry
Instructions
Add raspberries and simple syrup to a shaker and muddle.
Add rest of the ingredients, except for the club soda.
Add ice and shake until chilled.
Double strain into a Collins glass with ice.
Top with club soda and stir gently.
Garnish with a lemon wheel and a raspberry.
