Ingredients

  • 30ml Cognac
  • 15ml lemon juice
  • 15ml simple syrup
  • 90ml Champagne

Instructions

  1. Add the Cognac, lemon juice and simple syrup to a cocktail shaker with ice.

  2. Shake until chilled.

  3. Strain into a flute.

  4. Top with Champagne.

  5. Twist the lemon peel over the drink to express the oils, then garnish the drink with the twist.

  1. David Embury, in the Fine Art of Mixing Drinks (1930), features a recipe for a French 75 using Cognac. In it, he says: "Gin is sometimes used instead of Cognac in this drink, but then, of course, it no longer should be called French."
