Ingredients

  • 5 kumquats
  • 45ml grappa
  • 37.5ml elderflower liqueur
  • 7.5ml rich simple syrup
  • 7.5ml red wine(suggested: Merlot)

Garnish

Orange twist (discarded) and white grapes

Instructions

  1. Muddle kumquats in a shaker.

  2. Add grappa, elderflower liqueur, syrup and ice to the shaker.

  3. Shake until chilled.

  4. Strain into a coupe.

  5. Float red wine on top of the drink.

  6. Twist an orange peel over the drink, then discard the twist.

  7. Garnish with white grapes.

Hints

  1. To float the red wine make sure you pour it on the back of a spoon. It also helps if your bottle of wine has a speed pourer so you can better control the rate in which it flows into the drink.

  2. If you can't find kumquats in your area, try replacing it with other small, sour citrus fruits like calamondin. Otherwise, you might get some success using mandarins or tangerines with a bit of lime juice.
