Cognac Sazerac

Ingredients

  • 60ml Cognac
  • 2.5ml simple syrup
  • 4 dashes Peychaud's bitters
  • 1 dash Angostura bitters
  • 1 dash absinthe, for the rinse

Instructions

  1. Add the Cognac, simple syrup and bitters to a mixing glass with ice.

  2. Stir until chilled.

  3. Strain into an absinthe-rinsed rocks glass.

  4. Twist a lemon peel over the drink to express the essential oils and garnish with the twist.

Hints

  1. When compared to a Whiskey Sazerac, the amount of simple syrup was reduced to balance the added sweetness from the Cognac. Feel free to add more if you find this cocktail too dry.

  2. This cocktail is served without ice (served up). In order to preserve its temperature as long as possible, serve it on chilled glassware.

  3. Some people like to serve this drink with a small shot of absinthe on the side.

Trivia

  1. At one point it was believed that the original Sazerac was made with Cognac instead of rye whiskey.

  2. The now debunked story tells that bartenders used Cognac in Sazeracs for years, up to the point where a pest started ravaging vineyards in France. As the spirit began to be hard to come by, bartenders made the switch to rye whiskey.
